The beautiful interiors mirror the style of a French maison with white walls, dark wooden floors, chandeliers and an original fireplace. Épure’s lovely alfresco terrace is the perfect place to unwind for the evening. Serving only the finest French fare and wines, the restaurant’s Champagnes include Dalloyau Blanc de Blancs Grand Cru (HK$150 a glass) and Dalloyau Brut Rosé (HK$180 a glass). Pair this with their signature French cheese platter (HK$138 for three different cheeses) and shucked-to-order French oysters (HK$268) with lemon-and-shallot vinegar.

Tucked away in a hidden rooftop terrace on the 118th floor is the Ritz-Carlton Hong Kong’s Veuve Clicquot Sunset Lounge. For HK$1650, you can indulge in a whole bottle of Veuve Clicquot Rich (a new Champagne designed to be served on ice) with a choice of two accompanying ingredients: cucumber, grapefruit peel, bell peppers or Earl Grey tea. There are only a handful of private cabanas available here, so book well in advance.

You won’t be running out of champagne at Cabana.
