Who doesn’t love fried chicken? Crispy, addictive and oh-so-tasty, it’s the ultimate comfort food. So it’s perfect that here in Singapore, we have a wide array of options to pick from — be it spicy buffalo wings or Korean fried chicken, where the meat is fried twice to be extra crispy.
Set to join the artery-clogging ranks of these offerings is Yardbird Southern Table & Bar, which opens in the first half of next year at Marina Bay Sands. The US-based restaurant is known for its — what else — fried chicken, and operates two outlets in Miami and Las Vegas.

Yardbird made its Asian debut at the recent Epicurean Market, where it set up a booth peddling its iconic Southern American fare. Its signature Lewellyn’s Fried Chicken is based on a 100-year-old family recipe, and is brined for 27 hours before being dredged in a medley of spices such as paprika, cayenne pepper and garlic powder. It is finally pressure-fried in pork lard for maximum crispiness. The result is tender, salty meat encased in a well-battered, delightfully crunchy exterior.
If that’s not decadent enough, the poultry dish comes with a side of spiced watermelon tosssed in lemon and pepper (for a zesty blend of sweet, spicy and sour) and crisp savoury waffles coated in Vermont Sharp cheddar cheese. It is also paired with honey hot sauce and a delicious bourbon-infused maple syrup.

“A lot of love and soul goes into our fried chicken, and it’s an old family recipe we really stand behind. We select the best possible chicken, handle it with care, fry it to perfection and it has a beautiful flavour,” says John Kunkel, founder and CEO of Fifty Eggs, the restaurant group that operates Yardbird. He was present at the Epicurean Market to serve guests and conduct two culinary masterclasses.
Also on the menu of Yardbird’s soon-to-open Singapore outlet are buttermilk biscuits, Shrimp N’ Grits (comprising seared shrimp with ham and corn grits) and Fried Green Tomato BLT, a combination of smoked pork belly with tomato jam and frisée lemon vinaigrette. For tipple connoisseurs, there will also be an extensive repertoire of wines and cocktails such as Blackberry Bourbon Lemonade (a blend of blackberry puree, lemon, bourbon and cardamom) and Watermelon Sling, a whiskey-based brew mixed with watermelon juice.

“We’re excited to open in Singapore. I think it’s one of the most exciting culinary markets in the world right now and has an amazing collection of restaurants. Yardbird brings to the table something that isn’t represented right now in the market. So we think Singaporeans are going to love our food, and we can’t wait to be here,” says Kunkel, adding there are plans to add some local-inspired, country-exclusive dishes to the new outlet’s menu.
